Überdenkt Eure Nahrungstabus!
Davon, dass der übermäßige Fleischkonsum in den Industrieländern ökologische Folgen hat und zudem zu fragwürdigen Bedingungen in Tierhaltungsbetrieben und Schlachthäusern führt, verkündet derzeit fast die gesamte deutsche Medienlandschaft.
Auch ich finde, dass sich etwas ändern müsste.
Allerdings teile ich nicht die grundsätzlichen Bedenken, gegen das Schlachten und Verspeisen von Tieren, die Vertreter der sogenannten „Tierrechtsszene“ immer lauter und öffentlicher äußern. Doch in dem Artikel hier soll es nicht um diese Grundsatzdiskussion gehen.
Vielmehr möchte ich mich hier mit dem Gedanken beschäftigen was für Fleisch wir essen und mich fragen, ob wir hier nicht an einen Punkt gekommen sind, in dem unsere auf Convenience ausgelegten Ess- und Lebensgewohnheiten, der Welt und auch unserem eigenen Genuss schaden.
Denn wie sollte Fleisch für die sogenannte „moderne Küche“ beschaffen sein? „Natürlich mager und schön frisch“ würden viele unwissende Kretins hier antworten.
Fleisch das einen strengen Geruch hat wird heute als verdorben und nicht mehr verkäuflich empfunden. Nur wenige Feinschmecker wissen noch ein wirklich gut abgehangenes Steak oder Wildbret zu schätzen. Meist hingegen landet Fleisch, welches ein Bisschen streng riecht, direkt auf dem Müll.
Früher hingegen galt der Hautgout (nach frz. haut goût= Hoher Geschmack) geradezu als Pflicht für ein gutes Stück Fleisch.
Auch viele bekannte deutsche Kochrezepte gingen ursprünglich darauf zurück, dass man angegangenes Fleisch wieder genießbar machen wollte. Als Beispiel sei hier der bekannte Sauerbraten genannt oder die in Franken so beliebten „Sauren Zipfel“ (in Essig und Zwiebeln gekochte Bratwürste).
Meine Eltern besitzen noch ein altes Kochbuch aus der Nachkriegszeit. Etwa ein Drittel dieses Kochbuches beschäftigt sich mit der Frage, wie man verdorbene Speisen wieder schmackhaft aufbereiten kann.
Es wird darin beispielsweise empfohlen, Schimmel von Bratwürsten gründlichst mit Essig abzureiben und die Würste dann im kleingeschnittenen Zustand als Einlage für eine kräftige Brühe zu verwenden.
So weit müssen wir heute vielleicht nicht gehen.
Dennoch denke ich, dass es ein mittelschwerer Skandal ist, Fleisch wegzuwerfen, bloß weil es ein paar farbliche Veränderungen aufweist oder ein Bisschen riecht. Immerhin ist dieses Fleisch, auch wenn es vielleicht billig gekauft ist, doch mit gewissen ökologischen Folgen und dem Tod eines Tieres bezahlt.
Außerdem wundere ich mich doch ein Bisschen: Auf deutschen Tischen sieht man fast nur noch reines Muskelfleisch. Ein Tier besteht aber nicht nur aus Muskeln, sondern beispielsweise auch aus Gehirn, Magen, Nieren, Herz und so weiter.
Fast möchte man wehmütig singen: „Wo sind die Gedärme hin? Wo sind sie geblieben?“
Ich muss es ja selbst zugeben. Auch ich finde den Eigengeschmack von Innereien etwas gewöhnungsbedürftig, doch noch mehr finde ich ihn gewöhnungswert. Denn Oliven, Kaffee, Bier oder Tabak haben den meisten Menschen bei ihren ersten Versuchen auch nicht geschmeckt.
Wenn man sich dann einmal vorstellt, welche Bereicherung unseres Speiseplanes Innereien darstellen könnten und welcher Hauch von Exotik die heimische Küche beim pikanten Duft köchelnden Gedärms umweht, dann weiß man , dass solche kulinarischen Experimente sich mehr als auszahlen.
Und wer wirklich authentisch afrikanisch, asiatisch oder lateinamerikanisch essen will, kommt ohnehin um den Hautgout und die Innereien nicht herum, denn in vielen der dortigen Länder kann es sich ein Durchschnittsmensch überhaupt nicht leisten, mit dem Essen schneubisch zu sein.
Wem diese Geschmäcker am Anfang zu derbe sind, der kann sie durch die jeweils landestypischen Gewürze gut überdecken. Viele Gewürze (wie zum Beispiel Ingwer und Chili) haben eine antibakterielle Wirkung, welche uns zusätzlich schützt, falls wir doch mal ein Stück Fleisch verwertet haben, das wirklich über seine Zeit hinaus ist.
Leider geht der Trend weiter in die gegenläufige Richtung. Das Essen von Innereien und geruchsintensivem Fleisch hat sich inzwischen fast zu einer Art Nahrungstabu unserer Kultur entwickelt und ich denke, auch einige meiner werten Leser haben bei diesem Artikel schon mehrfach die Nase gerümpft.
Denn die gesellschaftliche Konvention hierzulande findet das, was ich hier freimütig propagiere, fast schon anrüchig.
Als man vor einiger Zeit das sogenannte „Gammelfleisch“ skandalisierte, ging es ja eigentlich nicht um vergammeltes Fleisch, sondern lediglich darum, dass Fleisch widerrechtlich mit einem neuen Haltbarkeitsdatum umetikettiert wurde. Allerdings muss man natürlich mit dem verpackten Supermarktfleisch vorsichtig sein. Denn eingeschlossen in Plastik entwickelt Fleisch keinen Hautgout, sondern wird einfach nur wirklich ungenießbar.
Deshalb empfehle ich niemandem, unter Schutzatmosphäre verpacktes Fleisch zu kaufen. Damit schadet Ihr nicht nur der örtlichen Metzgerzunft, die ihr ehrwürdiges Handwerk noch immer mit Liebe ausübt, sondern auch Eurem eigenen Genuss.
Und wenn Ihr knapp bei Kasse seid, dann geht kurz vor Ladenschluss zum Metzger Eures Vertrauens und fragt ihn, was dringend noch heute raus muss. Ihr könnt bestimmt einen ordentlichen Rabatt aushandeln, denn sonst müsste er es ja ohnehin wegschmeißen.
Ich jedenfalls bekomme vom Metzger aus meiner Nachbarschaft Massen an hervorragendem Fleisch zu reinsten Schleuderpreisen. Innereien sind sowieso oft günstig zu haben. Neulich habe ich auf diese Weise sogar fast zwei Kilo Lammnieren in bester Halal-Qualität für sechs Euro bekommen, die derzeit im Gefrierschrank auf meine Experimentierfreude warten.
Außerdem ist auch das Verspeisen von Insekten zumindest einen Gedanken wert. Insekten vermehren sich schnell, viele Arten eignen sich hervorragend für eine Massenhaltung, da sie ohnehin Schwarmlebewesen sind und sie liefern nahrhaftes und gesundes Protein.
Leider muss ich zugeben, dass auch ich unter der gesellschaftlich geprägten Abneigung gegen das Essen von Insekten (obwohl ich zum Beispiel mit Begeisterung Schrimps esse) leide und ich befürchte es wird mir nur schwer möglich sein, mich da umzupolen.
Doch einer Heuschreckenfrikadelle ohne Chitin, Beinchen und Mandibeln würde ich durchaus eine Chance auf meinem Teller geben und die Agavenraupe aus dem Mescal habe ich auch würdevoll hinter mich gebracht, wenngleich ich zugeben muss, dass dies vielleicht auf die Enthemmung durch den Alkohol zurückzuführen war.
Ich denke bei der Überwindung der eigenen Grenzen in Bezug auf Nahrungsmittel gilt der gleiche Grundsatz, wie bei der Überwindung eigener sexueller Grenzen:
Nur so weit gehen, wie man verantworten kann und sich dabei gut fühlt!
Trotzdem ist es an der Zeit, im Namen der Umwelt, der geistigen Freiheit, dem eigenen Erfahrungshorizont und dem Wohl der Tiere, unsere Nahrungstabus auf den Prüfstand zu stellen.
Der über dem Artikel abgebildete “Gekröseteller” oder auch “Gedärmemampf” ist die sogenannte “Schlachtplatte für Fortgeschrittene”, die ich mir im Vogelbräu in Karlsruhe gegönnt habe.

Auch ich finde, dass dieses Essen eine fremdartige und doch vertraute Ästhetik ausstrahlt und dabei gleichzeitig den Konsens der modernen westlichen Gesellschaft in einer Form herausfordert, wie es wirklich nur moderne Kunst vermag.
Und wenn man dieses Kunstwerk dann auch noch in Relation zum Weltgeschehen setzt, so muss man erkennen, welche derbe Ironie sich hierin offenbart.
Eine Mahlzeit, die für Millionen Menschen auf dieser Welt ein wahrer Traum wäre, wird in unseren verwöhnten Augen zur Kuriosität, die man begafft wie einen Schienenunfall.
Dies ist Kunst, welche man als kritisch und hedonistisch im allerbesten Sinne bezeichnen kann, wobei sie den Distanziertheitszwang künstlerischer Abstraktheit durchbricht und für den Betrachter konkret erfahrbar wird.
An diesem Punkt geht dieses Meisterwerk sogar weiter als die berühmte Performance der Marina Abramovic, bei der sie sich im MOMA in New York tagelang schweigend wildfremden Besuchern gegenüber setzte.
Denn hier wird die Grenze zwischen Kunstwerk und Betrachter durchbrochen, indem das Kunstwerk zumindest für eine gewisse Zeit leibhaftig zum Teil des Betrachters wird. Zumindest bis der Verdauungsvorgang abgeschlossen ist.
Um so mehr staunte ich, Derartiges in einem deutschen Brauhaus serviert zu bekommen. Vergesst die Molekularküche!

Das was Du beschreibst, ist kein NahrungmittelTABU, sondern ein gesellschaftliches Ernährungsproblem.
Gedanken über Ausmaß unseres Fleischkonsums und Herkunft unseres Fleisches sind derzeit Gegenstand einer regen gesellschaftlichen Debatte. Ebenso sind Vegetarismus und Veganismus keine Tabus.
Vegetarier oder zumindest “Flexitarier” sein, ist derzeit in wie noch nie.
Bio- und Vegansupermärkte schießen wie Pilze aus dem Boden. Jetzt wurde gerade ein riesiger Veganshop hinter dem “Bernemer Wurstmaxe” eröffnet, wo ich mir bestimmt demnächst auch mal leckeren Seitan kaufen werde.
Von einem Tabu kann man da wohl nicht sprechen:

Die von mir beschriebenen Tabus sehe ich aber als Teil des von Dir angesprochenen Problems.
Auf eine zugegebenermaßen extrem vereinfachte Formel heruntergebrochen:
Wenn wir ein Tier schlachten und dann 50 % des Tieres sofort wegschmeißen, weil sie niemand essen will und dann davon noch einmal 50 % wegschmeißen, weil sie nicht mehr frisch sind, müssen wir bei quantitativ gleichbleibendem Konsum vier Mal so viele Tiere schlachten.
Vielleicht könnte sich unsere Gesellschaft ja auch etwas vom Umgang beispielsweise mongolischer Nomaden mit ihren Tieren abgucken, auch wenn das natürlich nicht 1:1 auf unsere industrialisierte Kultur übertragbar ist.
Diese Leute achten und schätzen ihre Tiere und nutzen sie gleichwohl als Nahrungsquelle. Wenn geschlachtet wird, dann wird das ganze Tier verwendet, da jeder noch so kleine Teil als wertvoll empfunden wird.
Übrigens sind dort bei Schlachtungen regelmäßig sogar kleine Kinder zugegen, die davon seltsamerweise nicht einmal für ihr ganzes Leben traumatisiert werden.
Und niemand dort käme auf die Idee, ein Gericht, das Schnauzen, Euter und Innereien enthält, “bizarr” zu finden.
Krank hingegen finde ich, wenn Leute nurnoch Filetstücke futtern und sich vor jedem Stück, das noch ein Bisschen nach Anatomie eines Tieres aussieht, ekeln. Diese Leute sollten es vielleicht besser ganz lassen, Fleisch zu essen, als sich weiter in ihrer seltsamen Verdrängungsstrategie einzuigeln.
